Recipe for Vegetarian pho roll and cashew sauce

Pho roll with vegetables

Ingredients:

  1. Pho roll with vegetables:

– 50gr string bean

– 500gr pho sheets

– 200gr tofu

– 20gr enoki mushrooms

– 10gr shiitake mushrooms

– Spice: vegetarian cooking oil, broth mix, MSG, soy sauce, sugar, dried shallots, pepper, lime, chili

– Herb, lettuce

Pho roll with vegetables

  1. Sauce:

– 1 cup of fresh cashew (220gr)

– 10ml lime juice

– 2 tbsp sugar

– 1/2 tbsp salt

– Water

Directions:

Pho roll:

– Peel, wash and slice string beans and carrots

– Slice off the root of enoki mushrooms and give the mushrooms a quick rinse

– Wash shitake mushrooms thoroughly and remove the stems, soak the mushrooms and cut them into thin slices

– Fry the tofu and cut them into slices

– Fry shallots and stir fry them along with string beans, carrots, enoki mushrooms and shiitake mushrooms. Then add 1 tbsp vegetarian broth mix + 1/2 tbsp MSG + 1/4 tbsp sugar and stir well until all ingredients absorb the spices, sprinkle a little pepper to create the attractive aroma.

– Add all stir-fried ingredients along with the herb and lettuce onto Pho sheets and roll it gently.

Cashew sauce:

– Soak cashew for 4 hours

– Grind cashew with lime juice, 3/4 cup of water and salt

– Put the mix onto a bowl
